- Smell - typical of the product
- Moisture content - 14% to 15% during the winter period
- Wet gluten over 28% (min 26%)
- Slacking of gluten - 5-6mm
- Acidity - up to 2.5° German
- Non-dissolved ash - 0.1%
- Ash (total) - up to 1%
- Crunch - not allowed
- Batch size:
- Oversize fraction in semolina sieve of 320 µm holes, not more than 1% pure semolina.
- Oversize fraction in control sieve of 250 µm holes, not less than 55%.
- Undersized fraction in control sieve of 170 µm holes, not more than 10%.
